Cockspur Rum celebrates the unofficial beginning of summer with a collection of both food and drink recipes inspired by barbecues, parties and gatherings for the upcoming season. The booklet features delectable recipes including Coconut Crusted Shrimp and Chicken with Bajan Hula Sauce, the fruit-filled Bajan Sling punch, as well as the makings for a Bajan Party Bar. These creations sprung from the inventive minds of industry experts Shaun Daugherty and Paul Higgins.
Daugherty has been in the industry for 25 years working in various roles such as trainer, manager and bartender at some of the best bars in the nation. ?Higgins, a 40-year veteran of the hospitality industry, serves as a culinary advisor for Your At Home Bar, LLC.?
?Summer is a time for being outdoors and relaxing with friends which is what inspired our food and cocktail booklet,? said David Meyers, who manages Cockspur Rum in the US. ?Rum in general evokes images of the islands and fun in the sun. Barbados Sling
Ingredients:
Two parts Cockspur Fine Rum
Two parts pomegranate juice
One part peach nectar
One part pineapple juice
Lemon, lime and orange slices
Combine all ingredients in a punch bowl or pitcher.
Stir well. Float fruit slices on top for decoration.?
Serve over ice. ?Enjoy!
